My mum has written a christmas list that says

"some embossing boards would be nice, maybe a flowery one. Not the kind that go in a machine though"

Not a bleeding clue. So, i think she has a crafters companion (she watches that create and craft) this is all a new venture for her. Googling embossing boards shows crafters companion (limited selection) glitter girls and keepsake. Would they all work? As keepsake have a nicer range and better priced.

Can anyone point me in the right direction?

I'm assuming you mean she has an Ultimate Pro - big purple thing like a briefcase??

The Glitter Girl boards will work alongside it.

You can get brass stencils for embossing too, they don't use a machine. There are lots on ebay.
