Quilting Beginner - Baby Clothes Quilt

Hello everyone

I'm really keen to use the baby clothes I have kept to make a memory quilt by cutting patches of the fabric.

I'm not great at sewing (can only sew DS's Cub badges lol). Can I do this by hand? I was thinking backstitch?

I will be practising lots before taking the scissors to the baby clothes. I'd rather make them into something I can look at every day that keep them stashed in a cupboard!
