what stich to use for oven mitts?

I have some fairly think yarn (in 2 colours) that I would like to make oven mitts with (a rectangular shape, no thumb).

I would like to make them thick-ish to make sure that the heat doesn't get through (would use it for lifting out a caserole dish or a cake tin out of the oven).

I am a very rusty knitter/crocheter, the only stich I can think of is: knit & purl & purl& knit on the other side. Can anyone recommend a thicker stich and manageable for a rusty knitter?
