Veggie batch cooking ideas with a 2 year old?

I am really going through it with the Terrible 2's.

All I seem to do is cook, clean and look after him.

Does anyone have any suitable veggie batch cooking ideas they could suggest please?

A bean based Chilli.
Vegetable curry
Vegetable pasta sauce
Chunky veg and lentil soup - you can add loads of lively crusty bread

Veggie pasta sauces are a great one.
I also make dhal in batches and it freezes very well.
there is a great site called yummy toddler food and gives you ideas exactly for this op. Filter by veggie recipes and there’s lots

This is nice, easy to cook in a slow cooker and you could adjust the spices for a child/ adult version (although it is really mild as is)
