Stuck in a meal rut

Help, please.

We're stuck in a meal rut. DD1 is an ex-preemie who had significant issues with oral aversion, and one the first things she'd actually allow in her mouth was mac&cheese. She's much better at it now, but one day of the week is reserved for mac&cheese from scratch (with various iterations of hidden protein and veg). Then DD2 demanded the same with sausages, so that's another day. I'm a dab hand at stirfrys, mushrooms in particular, so that covers day 3, and DH loves anything Mexican. The deal is you have to wat other's favourite to get your day.

Friday is invariably a fish traybake, and Sunday one set of DPs or DSis over for/hosting a roast - 2 meals we all agree on, provided nobody makes DD1 eat broccoli or feeds DD2 mangetout. I sometimes try to infuse something new on a Saturday, but more likely than not we'll do a build your own pizza with veg.

I'm bored, I'm itching to try other stuff, but by the time I get around to do my weekly order I just return to the same, as I know for sure (with the exception of the roast) they'll all be 20 minutes max from the time I pull out the chopping board to the time I shut the oven door.

I'm trying to vary our meals more and add to my repertoire. Like you I need things that take 20 mins prep.

What about duck breast with 5 spice. Quick, easy and tastes good. Or salmon tails baked in lemon couscous. Equally quick.
