What’s your “posh” mid week meal?

By posh I mean it feels elevated and fancy for a random Thursday evening.

Mine is always Gerlic chilli prawns in tomato sauce with crusty bread and salad. Sometimes I make the bread (using bread maker) and sometimes we pick up something from the supermarket bakery.

Or moules mariniere. Served similar to above and done in no time!

Or homemade pesto with spaghetti. Chuck the ingredients in a nutribullet and bobs your uncle.

What about yours?

And by mid week I mean 20-30 mins of cooking :)

“Sausage ragu” is another one of mine. Literally just fry some sausage meat with onion, garlic and chilli. Jar of Passata. And a grating of Parmesan. So easy.

I don't really do posh meals in the week. I cook nice food on a Monday that does throughout the week. This week it's Broccoli and Stilton soup, a Christmas ham, potato salad, cauli cheese, roasted parsnips and onions: getting used up throughout the week.

Elevated might be when i do a steak dinner. Sometimes I'll do Sammy seabass (by Joe Wickes), or maybe baked camembert with crusty bread and crudités.

Not quick but elevated is my Monday fish tacos where I bread fish, fry it, make the shells and guacamole and salsa serve with salad and sour cream. Yum!

What is gerlic?

wondering if you mean garlic or of it’s something I haven’t heard of.

Mine would be baked potato with Spanish chicken - about as fancy as we get midweek!

Dh makes a lovely pasta dish with sausage, fennel and ricotta. If he uses a slightly more fancy pasta and mutti tomatoes it feels quite ‘posh’

Seabass pan fried with a caper butter. Hasselback potatoes. Asparagus and broad beans (spring): or broccoli and greens.

Moules mariniere is the DC's standard Saturday lunch - feels a bit different but is actually boil in the bag.
I do chicken breast wrapped in pancetta and stuffed with Stilton as my 'effort' midweek meal. Tasty with a jacket or new potatoes and some green beans.

No, mostly salmon pan fried with a herby butter, soft frisée salad and baguette.

Mousse au chocolat (from supermarket).

That is literally the same meal i was going to say right down to the mutti tomato! It’s absolutely lovely, i first had it in an Italian restaurant and made my own version a week later. Lovely stuff.

i can’t say I love cooking (more the eating that motivates me) but in January making a bit of effort with food in the evening does seem to make me feel a bit perkier. We’ve kept some of Xmas candles and fairy lights up. And it makes me feel quite Nigella-y tbh!

Have made a few pasta dishes with Boursin (is it a TikTok thing? DD suggested it so I can only assume so) and it is heavenly. No effort whatsoever.

I've just realised that whenever I cook fish mid week it feels "more"

Prawn orzo pasta with feta
Spiced salmon with roasted veggies (sometimes cous cous)
Fried fish fillets with either a curry ish sauce and rice or with mash and sauce vierge
