Making a cheese sauce with Red Leicester

Can it be done successfully? Thought I had cheddar, but only have the orange stuff!

It's a very mild flavour so it might be on the bland side, but in terms of texture it should be fine

Yes but your cheese sauce is also a very orange colour, from experience.

Oh I would do this. I tend to buy Red Leicester in favour of Cheddar these days as I really like the flavour. And I love the colour!

It'll be really nice, Red Leicester is a lovely cheese. Maybe a bit mild but a great flavour. Give it a go and see how it turns out! And yes, will be more orange, but is that a bad thing..?

It will be fine, I would add a little mustard to up the flavour. I often use Red Leicester on the top of things as it melts well and gives a nice colour.

Add the merest blip of brown sauce to "up" the flavour. I also add a blip of tomato ketchup to cheddar cheese sauce to make it more orange but you won't need that with RL.

ETA: I add mustard as a given. Preferably English but sometimes I use the squeezy American stuff if it's nearer to hand.

The flavour is barely any different from a mild-medium Cheddar and it has the same texture so the only real difference is going to be the colour. It's fine.
