Wtf is this blue in my curry base?!

I added chopped onions and some garlic ginger paste and salt to a pan with hot veg oil in. Everything beige ish, white is. Stirred then went away. Came back 10 mins later and there was a lot of vibrant, turquoise blue in the pan! Is it safe to eat?
The colours getting fainter now as it's cooking more but the first pic is more like the colour it was at first.

???

It’s the vinegar / acid in the paste reacting. It’s perfectly fine to eat, just a bit disturbing!

Google said garlic can sometimes do this but I've never seen it or anything like it and I cook a lot with garlic! Couldn't find a pic of the actual colour on Google. Is it really this blue?!

Yep. I’ve only had it once and was shocked. It doesn’t affect the taste but I was a bit put off!

This has happened to me too. It’s fine. Just a reaction between I think the garlic and something. But harmless if a bit odd.

Yes, it's not a colour food should ever be so definitely off putting! OK good I didn't fancy chopping a million onions again to start over.

Oh, blue garlic is a thing.

Kind of reminds me of a brighter shade of my kitchen wall.

I’ve had garlic turn blue a couple of times. I know it’s completely harmless but I just couldn’t eat it.

I ran out of fresh ginger to mix with the garlic so added some Very Lazy from a jar to make up the weight, which is pickled in white vinegar... so it must have been that. But I have cooked with garlic for about 32 years and never ever seen this reaction, so it can't be every garlic bulb! Thanks all.
