So I froze mince on day of purchase.
Defrosted and made huge bolognese. Froze leftovers.
Now I want to make a lasagne but I know there will be enough to make 2 lasagnes.
Can I then freeze again? It feels a lot of freezing and defrosting - do not want to risk poisoning me and dd!

I wouldn’t re-freeze cooked meat that has already been defrosted and re-heated. The first defrost is fine as the meat was uncooked at that stage but I don’t think the second would be recommended.

I wouldn’t be defrosting and re freezing. I don’t know if there might be a problem but it would be a step too far for me.

The photo is showing. It's not, strictly speaking, a Google search. It's a Google AI result.

Like Chat GPT, or any large language model, it can't be relied upon to give an accurate answer. In fact, if you look under the list of answers it will say as much.

People need to realise this and not use AI as a reliable search tool, especially for something as important as whether your lasagne will kill you!

I would.
But I would also thaw anything frozen in the fridge so it stays appropriately chilled. The real risk with re freezing is people don't thaw safely so the bacterial load is massively increased each time and re freezing only halts growth, it doesn't kill it.

I’m reading this as it’s fine to re-freeze cooked mince that was defrosted from raw. More clarification needed!

Thaw the Bolognese in the fridge overnight.

Then when cooking the lasagne make sure it's absolutely piping hot right through to the middle.

Doing it like this will mean two things:

  1. Bacterial growth will be minimal so as not to spoil the Bolognese
  2. Any bacteria that do grow overnight in the fridge will be killed by the cooking.
