To put butter in the batter?

As shrove Tuesday is approaching, some colleagues and I were discussing how best to make pancakes. I was the only one to suggest putting melted butter in the batter, sometimes I even put maple syrup in the batter - same with waffles. Everyone thought I was barmy.

I did explain I use Staub cast iron pans (I use Staub pretty much exclusively) and the best way to stop sticking is to add melted butter to the batter. I also cook the pancakes in butter for the extra buttery goodness! Yet no-one agreed it is the way to go and went on to mock my culinary skills!

ABIU to put butter in the batter or not? There must be more of us out there? Dare I say, dozens of us?

Well the recipe I use for American style pancakes had melted butter in so why not

Yeah to be fair the Delia recipes don’t always make the quantity required here! That’s why my cookery course book is heavily annotated with multipliers!

Delia's recipe book has always been my cookery Bible too. I always use her recipe, complete with melted butter. Pretty foolproof.

I am very much in favour of melted butter in the batter.

But it is important not to accidentally use bitter butter in your batter. Butter is bitter if you don't wash all the buttermilk out. Use better butter to make sure your batter isn't bitter.

Don't put maple syrup or any sweetener in batter. The same batter should work for both sweet and savoury fillings.

I didn’t realise Delia told us to use butter. I’ll have to find it and take it to work with me!

Yes to melted butter and kirsch or orange water. No to oil. 🤢

Also, allow the batter to rest before using.

I do the same as you.
I also add the filling...lemon/sugar/syrup/etc...whilst they are still in the pan and roll or fold them in the pan too.
Much less work and mess.

The scotch pancake recipe I use has melted butter in.
