To show off about my bundt cake

Hello
I had to use up some extra thick cream and thought I would experiment to see if I could use it instead of butter in a cake recipe.
Couldn't find a recipe online so I kind of guessed and threw all the ingredients together.
Omg it's amazing- so soft and tasty and not too sweet. I may add some Icing sugar and sprinkles on top but it is yummy and it might not last long enough to decorate.
Cakes normally have to be so precisely measured but this just worked

I used a full tub of out of date cream so 300ml, 3 medium eggs about 175g Caster sugar 200g self raising flour gluten free so added a quarter tsp of xanthan gum and tsp baking powder and a good slug of vanilla extract. It was quite thick so I added a bit of milk to loosen the mixture
I thought I should be okay if it's got eggs and sugar and fat in it
Considering it's gluten free too it's amazing
I'm so glad the cream didn't go to waste 😋

That sounds amazing, so for your next trick, if you havent got a bundt tin, what size other pan can you use?

I usually bake in a square tin as its easier to cut up- 25cmx 25cm so I imagine that would work fine
I baked it at 170° in a fan oven and it was done in 40 mins
