Been seeing a man for a while. He has even said he would book a holiday with me for next year. We are basically a couple in how we are together but he just came out with that he can't commit and put a label on us and I feel really hurt and don't know what to do.

Sounds like what he means is that he wants to keep his options open and isn't prepared to be faithful should opportunity arise. Its up to you if you are happy to stick around for that (and it doesn't sound like you are). How long is 'a while'? This holiday, sounds quite vauge. Like it's there to show some kind of future without any actual commitment.

Basically you can stay or go. It’s not complicated. The promise of a holiday is just talk. His actions will show you who he is.

How long is a while? It doesn't sound like he's committed to your relationship, at least he's told you now so you can decide whether to see how it goes or cut your losses and move on!

You know what to do. He has reeled you in but now is making clear he does not want to be committed to you but is hoping you will waste your time, hanging around so he changes his mind.
