I defrosted some stewing steak over night and put it in the slow cooker today to make a pie filling.

We no longer fancy pie. Would it be ok to leave it to cool and then construct with the pie lid tomorrow and cook through again to eat tomorrow?

Perfectly fine, just cool it quick and get it in the fridge. I've done it hundreds of times. Or make it up into a pie and freeze it, ready to be cooked from frozen another day.

Not only that, you could freeze it if your plans for tomorrow were to change.

Fine to cook it and then reheat it once.
You shouldn't reheat any leftovers from the pie tomorrow.

This may well be the official advice, but I wouldn't think twice about it.
