I have chicken breasts, a lot of cherry tomatoes, some peppers, red onions.

I’m not a confident cook. I had ordered a Magi so juicy packet mix for tea which wasn’t in stock so I need to recreate it. I have an okish assortment of herbs and spices.

What would you recommend I add to my chicken to bake (roast?) it in the oven with?

What herbs do you have??? I would do a tray bake and add pepper, thyme parsley and dried basil and a tin of chopped tomatoes if you have them.Cook for an hour?? Ish the tomatoes will melt down 🤤🤤 serve with jacket potatoes or wedges x

I would dice chicken, peppers and onions. Toss in a little bit of oil and mix of spices you like (onion or garlic salt, smoked paprika, fajita mix? Whatever you like) or balsamic glaze if you have it. Roast in oven. Serve with tomato salad & wraps/bread.

Or add tomatoes to the roasting tray and serve with rice. 😄

Do they have skins on? Either way I'd probably go down the Mediterranean route given the veg, and roast the lot in a tray with olive oil, oregano, a bit of lemon juice and black pepper. If skins, I'd oil the skins and roast the chicken upside down for a bit them turn over to crisp, with the chopped veg in from the start. I do that with thighs.

I would sear your chicken breasts in a pan with salt, pepper and some dried herbs (ideally oregano or basil, but mixed herbs also fine), then sweat your onions and peppers in the same pan.

Add all to an oven dish, roughly chop your cherry tomatoes, add approx 500ml of veg / chicken stock and bang in the oven at about 180 degrees for 45 mins or thereabouts.

Serve with rice or pasta, or if you have potatoes, chop up and add them about 25 mins in.

I'd go for a Spanish style tray bake, cut the chicken into large chunks, cut the peppers and onions into smaller pieces, chuck the tomatoes in full, add some sweet smoked paprika, bit of thyme, add some chorizo or pancetta if you have any (I'd fry off the pancetta first and add it at the end). Serve with crusty bread or rice, could even add some prawns towards the end for a loose version of a paella

I am going against the grain here a bit but I would mix wholegrain mustard with honey and a bit of olive oil, brush the chicken with the resulting paste and roast together with onions. Grill tomatoes and peppers separately.

I'd just roast that all up with garlic and some paprika or chili if you have it. You'd need to stagger it - breasts first, then the onions/peppers, then the cherry tomatoes.

It's like ready steady cook but with actual ingredients that work together rather than a pineapple, some liver and an avocado!

You can definitely make a nice dinner from the suggestions above.

Sounds like a tray bake waiting to happen. I'd just put that lot, a few chunks of potato or chick peas in an oven tray, splash of oil and some stock any your favourite herbs and bake until the chicken is just cooked.

I would tray bake all the veg for half an hour with garlic and herbs - add new potatoes if you have any.

Then slash the chicken breasts, sit on top and bake for another 30. Top the chicken breasts with pesto if you have any, or cream cheese, or roule, or goats cheese.

Drizzle of olive oil and balsamic to finish.

Coat chicken breasts in seasoned flour
Fry them in a medium hot pan with two tablespoons oil/butter
Remove and place in a caserole dish in an oven at 150 degrees
Chop onion, Peppers and tomatoes, chilli and garlic and fry until soft
Add half a pint of chicken stock and cook for 5 minutes
Return chicken to pan
Add 4 to 6 tablespoons of cream
Add some parmesan [if have]
Serve with green vegetables or rice or pasta
