To ask what to do with this many pickled onions

MIL just presented me with an enormous jar of pickled onions she's made, full size onions. It'll be on me to eat them because DH hates them and I DO love pickled onions but I normally have miniature ones and have them on the rare occasion I might have cheese and crackers, I don't know what you do with them otherwise. What do you use a full size pickled onion as an accompaniment for?

They last so long that I don't really see the problem. It's not like they'll go off in a couple of weeks.

As much as I like the odd silverskin I dont think I could eat a full size pickled onion! Regift it?

I slice them and put them in cheese sandwiches.

I also put a quarter of a teaspoon of chilli flakes into the jar to make them a little 'piquant'

Cut one in half to check it has actually pickled
The reason small onions are normally used is that it is hard to get the pickling liquor into the middle of a bigger onion.
If not pickled, they will just go off. Yuck.

I'd make a cheese and pickled onion sandwich.Get raging heartburn and then leave the rest in the fridge for months.

Make some into a sweet and sour sauce. I used an old Kenwood recipe which I've since lost. You do chop them up though!

Cook with them. They add a tangy note to everything.

Particularly good in homemade tomato soup me sauce. But good in everything except maybe milk based sauces.
