To stop seeing this person?

I’ve started a new internal job at the start of the year I made friends with a colleague. Started off well and she made me feel welcome, I’ve given her a lift to the office before etc

And now it’s advanced to meeting up outside of work, we’ve been for coffee twice and tonight for dinner. And omg I’ve never experienced someone talking at you to the point after an hour you’ve said all of maybe 10 words: I gave her the benefit of the doubt but after tonight I’m just so done.

She was again talking at me, when I managed to speak I was mid sentence when she interrupted me. The only time I managed a full sentence was when I ignored the interruption and kept speaking.

I just don’t get how you can’t realise how rude you’re being. But she’s my colleague so it’s so much harder to “drop her”

Well it's tricky, because she has been nice to you.

Can you just interrupt her and say I have to get a turn at speaking too or this is just not fair? Really quite nice people can be awful for phases of their lives. I just let them go on and excuse myself from hanging out with them for a bit.

You are under no obligation to keep seeing anyone, colleague or not.
