Emergency! Need a chocolate cake recipe. Just chucked my failed attempt

Dh is turning 40 today. Just made Nigella’s recipe and it was foul! The sour cream in the icing tasted spoilt.

I have enough time to buy more ingredients and bake (dh arriving home late after work trip).

What recipes are fail proof?

Im tempted by Ina Garren’s recipe but see that uses sour cream too - put off tbh

Honestly, the Betty Crockers chocolate fudge cake (devil's cake mix) is incredible at short notice and you either buy the chocolate fudge icing to go with or make your own. Never ever fails and tastes amazing - he'd never know!

If you need a round layer cake rather than a rectangular one like the Annie Bell, this is one of the chocolatiest I have made, and it’s pretty straightforward.

I'm not a very experienced baker and I find that the Good Housekeeping recipes are pretty reliable. BBC usually not bad either

I do five eggs, weighed, then the same weight of flour, marge, suger. Make 1/4 of the flour weight coaco powder. You can also add a teaspoon of instant coffee or some vanilla too.

Beat the suger and marge together until doubled in volume and very light in colour. Beat the eggs and alternate adding egg and big spoons of flour folding well in between.

Put into your prepped cake pans and bake for about 35 mins, checking for the last bit of time until they spring back when pressed lightly or a toothpick comes out clean.

Set aside and leave to cool.

For the filling I like chocolate ganache - equal amounts of double cream and a chocolate you like. Heat the cream, add in the chopped choc and leave to sit for a few minutes. Mix well (it will go through a stage of looking awful, just keep mixing!) and it will come together in a lovely thick ganache. Leave it to cool then spread on your cakes.

Not the most detailed instructions, sorry - I do a lot of baking and it's instinct bases these days!

Fool proof

8 oz butter
8oz sugar
6oz sr flour
2oz cocoa powder
1tsp baking powder
4 large eggs

Cream butter and sugar
Whisk eggs and mix into butter and sugar
Mix flour, baking powder and cocoa until smooth (add a little milk if needed)
Bake in 2 x 8 inch (20cm) sandwich pans at 190 (180 fan, gas mark 5) for 18-20 minutes (fan check after 17)

Filling is 100g melted chocolate, 4oz butter into mix, 4 oz icing sugar

Topping 100g melted chocolate 4 oz butter mixed in, with 50ml cream (add more cream if needed)

That will be very dark and bitter - I'd use something lighter if you can!

It will still work though 😊

Mary Berry’s recipe. Or I weigh my eggs and use that method. Too dark chocolate will just be bitter.
