What can I do with a defrosted half side of salmon

I was forced to defrost half a side of salmon on Monday
Not sure it's in our plan to eat it tonight. What shall I do with it?

My question is am I right in thinking I can't cook it and freeze it again?
It was bought fresh in the super market and frozen
It's not from The frozen section if that makes sense

It can be frozen again if you cook it.

Wrap loosely in lightly oiled foil. Scatter it with lemon slices bake for 25ish mins at 175C, refrigerated, and then eat cold. Serve with cold potato salad and a simple green salad with tomatoes. Maybe some bread and some lemony/caper mayo.

It’s fine to cook it thoroughly and then refreeze.

I'd just cook it then eat it cold tomorrow or something. I wouldn't refreeze personally.

Cook it as above, eat some, and make some sort of fish pie alike with the rest and freeze that?
