Mince defrosted 3 days ago?

I'm super skeptical with meat. DP isn't.

So settle this.

I took mince out of the freezer to defrost on Monday (put straight in the fridge).
Can I cook it tomorrow?

I would. If its been in the fridge it will have taken a day or two to fully defrost anyway.

Probably took a day or 2 to defrost so I'd say it should be OK to use tomorrow

Why can’t you just do it now - 48 hours in the fridge and it’ll still be completely ok.

Even without the sniff test, I'm with PP.
Unless it was absolutely on its last legs when you froze it it's absolutely fine.

Depends how near to going off it was before you put it in the freezer.

I would eat it without a second thought (DH is the one who worries about this in our family). I'd cook it thoroughly but I presume since it's mince, it's destined for a long-simmered, fully cooked recipe like bolognese or hot pot or pie so it should be fine.

I've put mince in the fridge to defrost overnight and it's still been partly frozen the next day.

If it's not grey it'll be fine.
