If I book hotel for one person...in Europe and my friend stays with me...are we doing something wrong? I can't see why we would book a double room and pay x2 when I am getting a king size bed in one room and just paying for one person?

Normally in Europe it is one price for the room, it’s not cheaper for one person. You would only pay for extra breakfast.

Well in the majority of hotels now the room price is the room price no matter whether you book for one or two people. Some give a discount on bookings for sole occupancy since you'll only be having one breakfast.

If the room really is half the price for one person than it is for two people then chances are it'll be a single room with a single bed.
