Low carb meal recommendations

Sorry it’s not a proper AIBU but I’m desperate.

I’ve been told that I probably have gestational diabetes again and at 18 weeks baby is already measuring big (I had gestational diabetes in my previous pregnancies and both times I needed insulin and ended up with complications/premature deliveries related to the gestational diabetes).

I’m trying to improve my diet before my appointment with an endocrinologist next week but I’m really struggling with coming up with meal/snack ideas.

  • I also have hyperemesis (although it has improved) which means I have food aversions to shellfish, chicken, eggs and red meat. I basically just want beige carbs (which is the one thing I really can’t have).
  • Anything I do eat needs to be safe in pregnancy.
  • I can have some complex carbohydrates (but not huge amounts), ideally paired with fibre, fat or protein.

Due to the hyperemesis I’ve lost 7kg this pregnancy so I’m already underweight (I was a healthy weight when I got pregnant). I’m not looking to lose weight so high calorie foods are fine.

I’m so bored of avocado, salmon and grilled veg, vegetable and bean soup, and Greek yoghurt with nuts, oats and berries.

Please help!
