Just how do some people justify their actions towards their kids?

WTAF is wrong with some people? This woman is clearly clever enough to make her own business work (her You Tube channel) & yet she abuses her kids by not feeding them and punishing them. They were found in an emancipated state with open wounds.

How does someone get that far down the line in their treatment of their own children without checking themselves?

Some people are just cruel to the bone - where is their compassion? I just can’t wrap my head around how she could even justify what she was doing?

Because when you are seen as clever etc, but your facade is hiding things that could get you into serious trouble and public humiliation, your children's natural naivety or disobedience, become what is likely to blow your cover.
The end result is more and more extreme things done to remain in control. It starts with fear and intimidation, but normal children secretly rebel in small but dangerous ways, and endanger the parent. So the treatment gets more and more insane in order to remain in total control and stop anyone seeing what's going on behind the facade.
Weakening them, terrorizing them, chaining, caging and locking them in the dark for days on end, is all justified in the mind of a parent who faces ruin if the original secret is outed. And now the child who stood to endanger everyone, has experiences and a body covered in scars that are the living evidence of the second often worse, secret that's developed from the first.
It's hard to explain how the fact the child's lack of understanding the parents needs might have exposed a problem, morphs into the child deserving to become the even bigger problem, but it's what happens in the parents mind.

Because wealthy white families (especially families in an area where the vast majority are a very particular religion renowned for protecting their own at all costs) are ignored by authorise who don’t believe they can be abusers. Apparently family member had been reporting her to social services for years.

I'm just surprised it's taken this long for her to be publically exposed and arrested. I'll never forget the video she posted about 4 /5 years ago, where her 5 year old had forgotten to take her lunch to school and she was refusing to take food or allow her to have a school meal as it would teach her a lesson.

Her own daughter (Shari) said the same thing! Authorities have been notified repeatedly and nothing was done.
