I also sometimes add the ‘cauldron’ marinated tofu on top (also fried until crispy). And I prefer the egg stirred through at the end of cooking (like egg fried rice).
It’s so delicious but so quick (especially if you use a sachet of pre-cooked rice).

Green risotto. Make risotto and chuck in any green vegetables.

Cubed halloumi, toss in flour or polenta, shallow fry until crispy, have with salad and pitta bread or wedges, make a sauce like tzatziki or tahini if you can be arsed, sweet chilli sauce if not

Veg kebabs (maybe with halloumi)

Refried beans - quick and cheap and tasty and nutritious. Roasted pepper pasta.

Chop strips of red pepper, onion & a bulb of garlic into the oven - drizzle with oil and mixed herbs, roast at 160 for 35 mins or until golden brown and soft

Veg into the blender, squeeze the garlic in, two tablespoons of tomato purée, 300ml of milk of choice & spinach. Blend until smooth

Pour into pan, season (onion granules, garlic granules, paprika, salt and pepper) and heat up.

Cook and drain pasta. Combine two.

Tasty and healthy, and no hidden textures too.

Spinach cannelloni. A jar of tomato pasta sauce, then stuff cannelloni tubes with defrosted frozen spinach and then top with a cheese sauce. Really easy and delicious!

Butternut squash, cauliflower and tempeh chopped in chunks then tossed with oil, curry powder and S&P. Put on a baking tray and roast until cooked.
Serve with salad, raita either on its own or in a wrap.

I made this yesterday - was dubious as we tend to load pasta with cheese, but am making an effort to be healthier/more plant based.

Baked beans on cheese on toast and macaroni cheese with baked beans spring to mind. Baked beans are vegetarian these days - Heinz stopped pork in them during the second world war and I don't think other brands have ever put pork in.

Crispy fried gnocchi with veggie sausages.

Parboil gnocchi for 2 mins. Meanwhile fry sausages, garlic and tomatoes in olive oil then add gnocchi to crisp off. Add whatever herbs, spices, greenery (spinach/kale) and/or pesto to taste. Add grated cheese, plenty of black pepper and serve. Delicious.

Halloumi, fried put then in a wrap with any salad/veg you fancy. We have raw red cabbage/tomato/raw peppers in summer and in winter fry the veg so it’s warm.

A very simple baked potato- done 8 mins in microwave then 10 mins on very high in oven with cheese and any salad/chopped veg with cheese is quick and delicious.

Moroccan chickpea stew. just fry off onions and then add grated ginger and garlic (can buy readymadr/frozen). some cumin powder, ras el hanout, dried mint, paprika, cinnamon powder, chilli flakes(or mix of whatever you fancy). cook down spices with onions etc. add some root veggies chucked up - I like carrots, some stock powder and water. then chickpeas from tin and tomatoes/tomato puree. the great thing is you add any veggies you want and change things around to suit your taste. I serve with spiced, buttery couscous and a zingy green side salad.

Microwave jacket potatoes with whatever toppings you want.
Pasta with peas and pesto.
Frozen roasted vegetables and tinned tomatoes with pasta/couscous/rice. Just add some added herbs for flavour.
