I like every kind of tomato and tomato-based foods except sun dried tomatoes.

I cut the tomatoes into quarters if large halves if small . Place them spaced out on baking parchment on a baking tray .Pre heat oven at 180 (electric) cook for 15 mins. Turn off oven leave the tomatoes in the oven over night and then put in a kilner jar of of olive oil so tomatoes are fully covered. I start to use them 2 weeks after.

I go through phases of eating them. I like the ones in oil, with garlic and herbs best of all.

Love them. Make your own pesto with them - divine.
