Hit me with your favourite vegetarian meals (suitable for kids too!)

One of mine is probably cheesy risotto. Risotto rice cooked in the pressure cooker with veg stock, loads of garlic, peas. Then stir in a large handful of grated mature cheddar and some parsley or chives to finish.

Fried rice with egg, corn, green peas, carrot and whatever else is on hand

Pasta:
pasta e ceci (cheap, great for leftover lunches too)
linguine cacio e pepe (if you can get pecorino with vegetarian rennet)
linguine aglio e olio - quick, cheap
gnocci sardi alla norma (I like the Ottolenghi recipe from Simple, he roasts the aubergine for ages)
spinach and ricotta ravioli in sage butter (time consuming, not a weekday meal)
lasagne made with puy lentil and mushroom ragu (again, this is a weekend one)
Tiktok pasta! (roasted feta and cherry tomatoes stirred through whatever pasta you want)
Roasted tomato orzo

Noodles/rice
Peanut ramen with veg and crispy tofu
Egg fried rice with fridge drawer veg
Katsu curry (I make it with some combo of panko tofu, aubergine, cauliflower and/or mushroom) - bit of a faff with all the breading
Persian noodle soup
Mushroom risotto

Curries/dals
Chana dal
Palak dal (made with spinach, cumin and lots of garlic)
Dal makhani
Paneer butter masala
Mushroom and coriander curry
Aloo methi
Those are all great on their own with just plain or spiced rice or flatbreads and a chutney or two, but if you want to make a big feast

Paneer and pea butter curry. I cheat and use a paste. Yummy combo that you can spice up or down depending on how much heat you like.

I stole this from a gusto box. It's the easiest recipe and totally lush

Use ceramic oven proof shallow dish and lightly oil it Pop in a whole Boursin cheese and a load of ripe good quality tomatoes chopped. Peel and thinly slice a garlic clove

Drizzle a little more oil. Lots of salt and pepper and plenty of basil.

Bake uncovered medium heat for about 25 mins until the tomatoes have cooked down

Whilst cooking boil some pasta. We love fusilli which works well.

Take out the cheese and tomatoes and roughy mash together with a fork. Pour gooey unctuous sauce over pasta with fresh basil. Totally yummy.

A quick meal that I make to use up random vegetables is:

  • Chop any kind of veg into chunks (carotts, butternut squash, leeks, onions, potato, sweet potato etc).
  • Add some more from the freezer broccolii, cauliflower, peas etc).
  • Pile into individual oven dishes.
  • Cover in a thick homemade cheese sauce.
  • Bake for 20 mins.
