Freezing cooked Lamb

Posting for traffic.
Got a shoulder of lamb for Sunday roast, haven't done this for years. But we've got so much left over.
DH will do a lamb and potato curry tomorrow 😋.
But we will still have leftovers.
Is it ok to freeze and defrost for a further lamb and potato curry later on?
I would assume it is?

Why on earth would you be unreasonable to freeze leftover roast lamb and use it later?

I think I would cook all the leftovers as curry and freeze the remaining portion.
i think it keeps better that way. I often freeze lamb and potato curry.

Yes it will be fine to freeze. The rule is not to reheat more than once, so suggest you make and eat all the curry in one go. The same will go for the meal you make with the defrosted lamb - cook and eat in one go. Sounds delicious by the way.

or keep some of it in fridge till Tuesday and make stir fry

I think we'd have to do that without the potato because we've frozen curry with potato in before and it turned to mush.
But maybe freeze the basic curry and use that as the base, adding potato, spinach etc is a good call.

Yes I find that too so try to eat all the potato before freezing. Then next serve add extra tomatoes and spinach or peas. Making curry stretch is so easy

Actually that is a great idea, scrap using it for a curry. Next Sundays roast. It was bloody delicious, cannot remember the last time I had shoulder of lamb.
