What shall I do with a large pack of boneless chicken thigh?

There are probably a million things I could do with the pack of chicken thigh we will have for dinner today.

I feel a bit frazzled and can only think of jar curry or pasta. Pasta isn't popular here and I did chicken wraps yesterday.

Anyone have any inspiration? Doesn't have to be gourmet with a truck load of ingredients, just something tasty that perhaps we don't usually do this end.

this is so easy and quick and tastes amazing. I do it with couscous rand salad for a low effort dinner

Remove skin, Gently pre-brown in a pan, add to casserole dish.
Pre-cook bacon, mushrooms, onion & celery add to casserole dish.
Add 4 sliced carrots
Add chicken stock to cover.
Add bag of bouquet garni
Cook in oven (fan 140C) for 1hr 45.

Serve with rice or new potatoes.

(Readers Digest cook book without tomatoes that I'm not so keen on)

My easiest dinner, chop celery, onion, carrots, put the chicken on top top up with chicken stock, from a stock pot and slow cook for about 4 hours. I thicken with chicken gravy granules. Sometimes put baby potatoes in or have it with mash. I am no chef😂

Tray bake - any veg you have, potatoes, olive oil, garlic, herbs. Yum!

Chicken chow mein
Sweet chili and soy sauce on the chicken with peppers, thin carrots, babycorn etc and noodles
Chicken soup
Chicken wrapped in bacon/parma ham, stuff with garlic butter and mozzarella with mash

Chicken escalops? Just whack them flat with a rolling pin, dip in flour (with herb/spice of choice if you like), beaten egg and panko crumbs and shallow fry. My kids love those.

I buy a Kg size (12 thighs). and cook them on the stove top in a large pan in chicken stock. Medium to low heat setting with the lid on for 12 minutes each side. Lovely and tender. Always have some in the fridge and freeze the rest.

Where do you get dry onion soup mix @fallfallfall - I use it in another recipe but I haven't seen it for sale for years!

Chicken / cream / mushrooms / other veg

Bake and serve with roast potatoes

Or sticky chicken - coat in cornflour then egg then flour (add pepper/salt) fry
when cooked add a sauce of tomato ketchup/honey/sesame seeds - rates lovely!
