I cook lunch. Some vegetables and fresh fish or chicken. One of the benefits of WFH. Can be done in under 40 minutes and you are entitled to a lunch break regardless of job.

I have a large kitchen/living room and so can put things in the oven or on the stove and return to work as it were for part of the time.

Leftovers from night before
Some form of egg on toast/bagels
Beans on toasts
Omelette and beans
Crackers with cheese
Pitta and carrot sticks with Hummus

You can have literally anything you want if you wfh. I wouldn't generally do anything that needs the oven though.
Sometimes it's just a toastie, sometimes soup or beans especially in winter. Sometimes a salad (massive or notGrin). Quite often make a batch of hummus and have that on a toasted flatbread with olives and tomatoes. Occasionally I might do a quick pasta of some sort.

Leftovers, cheese on toast with a handful of cherry tomatoes, bag of microwaved rice with sliced avocado and natural yoghurt, caprese salad, egg & beans, poached egg on toast

Cooking extra of whatever carbs we have for dinner the night before (rice, pasta or potatoes) and using it as a base for a cold dish the day after, adding things like tuna, boiled eggs, ham, mozzarella, cheddar, avocado, sweetcorn, peas, herbs, beans, leftover chicken and many others (not all together!).

I make a roasted vegetable cous cous, roasted new potatoes, cooked diced chicken breast, and a chopped salad each week (or some variant on these) and keep in tubs in the fridge. Then each lunch time I can pick and mix what I want with whatever else is knocking about in the fridge/cupboards.

I've given up on salad stuff as I'd be bored of it after 2 days or not have the time to make it.

Normally leftovers or chicken in a wrap with perinaise

sometimes for a treat I’ll make pizza with a wrap as the base or ill make a breakfast burrito mid morning which normally keeps me full (because they are huge!).

  • Avocado and griddled halloumi on a piece of sour dough
  • Mashed hard boiled egg on a piece of sourdough
  • Greek salad
  • Tuna nicoise salad
  • Butternut squash and goats cheese salad
  • Leek and potato soup

I've started buying a fresh tortellini pasta in the shop, spoonful of pesto, some pine nuts and parmesan and ready in less than 10 mins, warm and filling.

Also like an English muffin with a poached egg.

Soup

Pizza wrap things, get a wrap and cut it halfway across, in each quarter add a different topping, I usually do tomato paste, cheese, ham and pineapple. Fold each quarter up and stick on the George foreman or pan for a few mins.

Panini's as well

I make something Monday morning before work that lasts the whole week. current faves are
Tuna salad which is 500g new pots microwaved, chopped red onion, garlic, olive oil, lemon juice, chilli powder, fresh parsley, a can of cannellini beans and a can of tuna mixed in a big bowl. Does 5 portions served with salad leaves added.
My other favorite is chick pea burgers

Fry off an onion, add garlic, tumeric and ground cumin. Allow to cool. Blitz in a blender with can of chickpeas, can of lentils, 70g sunflower seeds, handful of coriander and an egg. Then mix with 80g flour in a bowl and make into 8 burgers.
Then each day I have 2 burgers with salad. Absolutely delicious!

They are lovely. Beware they are quite sticky to make so I put more flour on the work tip and liberally coat and store in tupperware in fridge they take 1o minutes to fry every day so once making is done very easy. Filling and healthy too!!!
