Cyprus potatoes - potato salad ?! Sorry it's not really aibu....

I have a friend coming round for lunch tomorrow and her favourite summer meal is potato salad… I've cubed and I'm boiling some Cyprus potatoes but they won't do will they? I have to do it tonight because tomorrow morning is mental and I'll be busy right up until she arrives… I wondered if I boil them "only just" and then chill them (dry) in the fridge… And dress just before serving? Or should I just parboil them and stick them in the fridge in bang them in the oven with some olive oil tomorrow instead?

I dint know what Cyprus potatoes are but I usually use new potatoes for salad.
I think roasting them would be a bit odd

If you are using a vinaigrette dressing, then put it on while the potatoes are still warm.

it makes all the difference.

They're very starchy, I've just tried one. Oh dear. I wonder what summery thing I can do with cubes of starchy potato now...

I have used cyprus potatoes for a potato salad. They are a slightly different texture from ordinary new potatoes but I liked them. I reckon you are over thinking this. Loads of mayo and some chives and they will taste great.

I agree that potatoe salad is best with waxy new potatoes but I'm sure they'll be fine.
I made some this week. Big dollop of mayo, tablespoon each of olive oil and wine vinegar mixed together, grated carrot, diced red onion or spring onions, and potatoes. Herbs as you wish. In a lidded container it was fine for 4 days.

Thanks all. I've starting bloody roasting them now. I'm now thinking of serving a garden salad alongside some kind of spicy roast potatoes with garlic mayo dip/sauce

Can you soak them in cold water for a while - or several changes of cold water to remove the starch? Should be ok after that!

Or how about dicing an onion and bring to boil in veg or chicken stock. Soak the potatoes in the liquid for a good 30 minutes and drain.
Add a selection of fresh herbs,
then mix potatoes with a lovely vinaigrette & mayonnaise or a mustard dressing. Into the fridge overnight and eat for lunch tomorrow!

I'm cooking some Cyprus potatoes in a stew at present and they take so long to cook. The rest of the stew is cooked and they're still hard.

Mix in a variety of beans - kidney/black eyed/garbanzo/any tins you have to hand (without the water), sweetcorn, peas, mayonnaise and give it a good mix. Works really well with starchy potato. Make it now, and it will keep in the fridge for a good few days.

Add beetroot, red onion, olive oil, salt and chopped coriander to the potatoes, my friend is Greek and she does this salad a lot, it's really good
