To not fix mortgage?

Currently on a tracker mortgage as our fixed rate ended last year. Planning to move next summer. Would have liked a 5 year fix that’s portable but mortgage advisor seems to be discouraging this as portability isn’t guaranteed even though I doubt we would have issues in terms of affordability and credit but they said you never know what a bank might say.

Could you just fix for a year? Only because it seems silly not to fix at what will probably be the lowest interest rate you'll get for a while.
We had a portable mortgage but in the end decided to pay the early exit fee as porting wasn't that simple (new house was worth more so we'd have ended up with two mortgages with different fixed terms).

We can fix for two years without early exit fees but with a 1k fee and higher monthly payments for a fix £60 more I’m not sure if it will be worth it?
