To share my secret crepe recipe?

I know pancakes and crepes aren't exactly the same thing. But if you want to try something new tomorrow, here is my (not so) secret recipe! My family loves it.
The brown sugar gives the crepe a different, less "doughy" texture.

For 20 crepes:
500g of flour
180g of brown sugar
1 teaspoon of ground cinammon
1 glass of water (150ml)
3 eggs
50 g of butter, softened in the microwave
1L of milk (I personally prefer to use whole fat milk).

Mix all dry ingredients together
Add the water
Then butter and eggs
And then the milk

Mix it all together and make sure the mixture is smooth.
You can use a whisk but I use a hand blender and it does the job tbh

Voila!

Soft light brown sugar is my favourite for this recipe

Sugar in pancakes? Yuk!! Cinnamon? Double yuk!! Even if I'm making pancakes for ice cream and hot chocolate sauce they're never made sweet.

I'm assuming you didn't make them then? 🙄

I've only just seen this thread so didn't get a chance to make them! But would love feedback from anyone who did and I'll add them to our nice 'weekend breakfast' menu.

mumof2exhausted · 02/03/2022 18:20

I make crepes all the time and you do not add sugar to a classic French crepe batter! Literally flour, eggs and flour in a burning hot pan. They are ridiculously thin and delicious base to add toppings! Surely sugar /cinnamon is added as a topping once cooked?

RichardMarxisinnocent · 02/03/2022 18:27

Have I time travelled without realising? This post says it was posted "yesterday" which was Tuesday 1st March, and talks about a pancake/crepe recipe to try "tomorrow" , which is Wednesday 2nd March. I assume that the OP thought people might want a pancake recipe for Shrove Tuesday, so why do they mention "trying something new tomorrow"? Surely people would want the recipe for Tuesday not Wednesday?

JaneJeffer · 02/03/2022 18:37

That's a lot of flour.

RoyKentsChestHair · 02/03/2022 19:41

Well I happily eat pancakes of all types all year round so I’m not sure why we wouldn’t want to make them tomorrow, next week or every day until Xmas tbh! People who only eat pancakes on shrove Tuesday are missing a trick.

Can you imagine the mess!
nearlyspringyay · 02/03/2022 19:43

Flour, egg, milk. Nothing else. The crepe is the vehicle for the other stuff. Like pasta. You don't add stuff to pasta dough!

I think it's quite clear this isn't a classic French crepe batter Confused

OP even mentioned trying "something new"

Blimey the crêpolice are out en force! 🇫🇷

ineedsun · 02/03/2022 20:00

One cup of flour and one cup of milk to each egg. Perfect every time.

I agree and also love a pancake when it's not Shrove Tuesday, it was just the specific mention of tomorrow (as if the OP thought people would definitely want to make pancakes then) instead of saying next time you make pancakes which had me confused about dates.
kagerou · 02/03/2022 20:29

Well past pancake day now but I'm sure I'll find an excuse to try these ^^
