I got six large, fresh scallops from the fish market this morning. I’m getting bored of just searing them with salt, garlic butter and oil.

What are you favourite scallop recipes?

I like to pan fry with 50/50 butter and olive oil, lemon juice and chilli, and serve with spaghetti.

We cook them with black pudding chopped up in small pieces then fried l, before the scallops go in.

Serve with red pesto pasta.

Roast tomatoes with fresh basil under streaky bacon, then fry some bacon in a pan remove, fry the scallops in the same pan with some extra butter. De-glaze??? The pan after frying the scallops with some balsamic vinegar and lemon then over the top of roasted tomatoes and scallops

Or with black pudding and slivers of Granny Smith apples

Pan fried with chilli flake and garlic infused oil, finished off with the juice of a lime a topped with coriander. Or pan fried and then served on pasta (tagliatelle, linguine or spaghetti) with a garlic, wine and cream sauce.
Also like them wrapped in bacon on a black pudding base, but never cooked them this way, just eaten in a restaurant.
Bloody love scallops me!

Pan fry and make a creamy sauce with creme fraiche and dill. Or for something completely different, make a ceviche by thinly slicing and marinating in citrus juices

Seared in a pan.

Make a dressing with Ginger juice, mirin, sake and tamari, toasted sesame seed oil, chilli optional.

Served with shredded cucumber and julienned carrots and over soba noodles.

But only if they're hand dived, the damage that trawling does to the seabed is awful.

Wrap each one in thin cut streaky bacon (you might need to secure with cocktail sticks) and fry in a griddle pan or grill. Drizzle with balsamic vinegar to serve. Lovely served on a bed of wilted rocket or baby spinach.

Flash fry with some large prawns in butter. At the end of cooking, add a good sprinkle of paprika and a splash of white wine, bubble for a moment or two, before serving.
