Squashed almond croissants

Why are almond croissants sold squashed now? I don't get it. They are lined up next to nice un-squashed plain croissants and pain au chocolat. Why squash the poor almond ones? Saw this at three different places this week.

Their used to be posh ones in the deli near me that were always quite flat, because loaded with almond fat deliciousness.

I suspect with the cheaper ones the added weight/liquid from the purée would flatten them after a bit.

Squashed but absolutely delicious! Don't they go back in the oven to get the almond topping all crispy? Maybe they have to squash them for that? Any bakers here, please enlighten us!

Almond croissants are normally previous day unsold croissants that are sliced and filled with "frangipane". I grew up in France and they were always squished, I guess to make them hold together.
Now, what is it with the bitter almond croissants? They are not supposed to be bitter, if I eat something with so many calories I want it deliciously sweet.

I’ve never known them not be quite flat, Waitrose ones are amazing

As @Jimjamjong says, squashed is normal! I lived in Brittany for a while, and they were always squashed, with frangipane in the middle and also on the top. Delicious!

Almond croissants are my weight loss downfall. I absolutely love them. I haven’t found one that rivals the Pret one yet though. It’s amazing.

They're not squashed you just need to cook them for longer or they collapse

they use the croissant to make almond croissants

the almond paste stuff is filled into the middle of the original croissant and unfortunately the weight and cutting/handling doesn't stand up to them not appearing squashed

butterscotch yum yum I just don't understand yumyums, ive tried them a couple of times but similar to Oreo, they don't taste of anything?

I only like the Waitrose one @ivykaty44 has walnuts on the top. Don’t like plain ones though. Oreo’s remind me of being a child I can’t eat them now though weird biscuits

I didn't know that jimjam - makes much more sense. Love the things I learn here. Maybe I was just lucky the place I used to stop at was inauthentic. I want all the fluffiness of (fresh) croissant. Actually, now I've been talking about it so much, I want any croissant going!
