Massive leftover cauliflower cheese

I fricking love cauli cheese, but even I outdid myself this year and we have a HUGE amount of it leftover.

WIBU to make it into a soup? I don't even know how to do it 🤣!

Any other recommendations? This was massive cauliflower, and the sauce is made with a proper roux and a shed load of strong cheddar and mustard.

Freezing it isn't ideal as we restart fat club (slimming world) next week. This week, we feast!

Mash it up with lots of other cooked veg then fry into cheesy patties/rissoles

Makes a great soup.

Fry off some leeks or onion and potato (potato thickens any soup base) then add vegetable stock and cook until pots are soft. Then add your cauli cheese in and warm through. Blitz with stick blender. Add in more stock depending on if you prefer a thinner or thicker soup. Season to taste.

Add on any other veg or meat you have left over too.

I’d make soup. Mix it with some stock and blend together.

I have the same issue here although is cauliflower and broccoli 🥦 🙈🤷‍♀️

My husband makes a lovely cauliflower cheese soup. I have no idea how!

Freeze it. It will keep for months. Portion it up in small bags and you can have it as a weekly treat.

Lots of interesting ideas! I might try the soup later on.... DH isn't as fussed as me for it, not sure he'll accept it in lasagne... But keep the ideas coming!

Just blend it with a stick mixer and heat it up for soup if its a bit thick add some cream or stock to thin it out you can also use it for macaroni and cheese as the sauce

I made mine into soup and then put a load in in the freezer. Fry a chopped onion , add the cauliflower cheese, and then add veg or chicken stock and blitz… oh and loads of black pepper. It was so good..

Heat it up, sprinkle some bacon on it, grab a spoon and tuck in! I love cauliflower cheese and yours sounds extra delicious

When I did keto once I put cauliflower cheese on top of mince like cottage pie. It was nice.

We’ve just eaten ours with the other leftover Christmas foods. I think I prefer it a couple of days after. 😄

Makes a lovely soup, or cook some macaroni, mix with the cauli cheese and a good splash of the pasta cooking water, top with breadcrumbs and warm through for a pasta bake of joy.
