Trying to eat and generally be a bit healthier, cutting back on the drinking, eating more veg etc.
My favourite healthy recipe is tomatoes eggs.
Cook red pepper, onions, aubergine down in until really well browned in a bit of olive oil.
Add a tin of chopped tomatoes and lashings of pepper, chilli flakes and a bit of salt.
Make pockets in the tomatoes veg mix and crack in 4 eggs (2 people). Then sprinkle with any fresh herbs I have like basil or a bit of pesto.
It’s not that fancy but it is very good!
