Leftover roast chicken

What (healthy!) dish could i make for tomorrow nights dinner with leftover roast chicken?

It was not a Mumsnet size chicken, merely a standard size one, so no ridiculous suggestions about using it for 6 different dishes, please.

Chinese chicken noodles. Boil the carcass with a couple of chopped onions. Use the stock with some noodles, chicken, mushrooms, spring onions and some chinese 5 spice. Yummy.

Stir fry. Do the vegetables first and add the chicken last.

Add some veg , stir in a pan with olive oil then, when sizzling stir in some flour then add stock.
Let it bubble then pour into an oven dish and cover with a few sheets of crumpled filo.
Brush with melted butter/spread then bake til golden.

Chicken risotto, use home made chicken stock if you’ve got some. Add mushrooms, peas etc to make it go further.

Chicken Caesar salad is quick and easy.

We often make a chicken pie with leftovers, with a pastry or mashed potato topping. Plenty of veg inside the pie, with gravy or creamy stock and a bit of white wine

I do creamy Cajun chicken with pasta. Onions, garlic, a couple of tomatoes, Cajun seasoning, a dash of white wine and some double cream. And chicken. (Have possibly forgotten one or two things, but that's the basics!) Its lovely and so quick.

Round here it would be a curry or stir fry with whatever veg was knocking around, a pasta bake, a risotto (though I don’t go so far as making my own stock from the carcass) or chicken fried rice. Would depend what other ingredients I had and how much chicken was left - I find it goes further in fried rice for example than in a curry.

Chicken ceasar salad. Sometimes I "adapt" this by dipping the chicken in egg and katsu breadcrumbs first then baking in the oven.

Put it in puff pastry alongside some baby Spinach, two types of cheese and a tiny bit of passata.
Add other bits if you fancy it, Tomatoes, onions, green chillies, peppers, sweetcorn.

Chinese fried rice. In a wok sear some onions, add Chinese five spice, dark soy sauce then frozen peas, chopped spring onions and any other veg (I add chopped salami too) and the shredded chicken. Add some cooked rice, coat in sauce/spices, then put lid on and turn off heat, leaving it to steam. Serve with prawn crackers.

I'm a big fan of Hugh F-W's 'lentils with everything' idea for leftover meat, particularly if you haven't got masses of meat left. So, you cook a pan of Puy lentils in some stock, then quickly sauté your chopped up chicken along with an onion, chucking in maybe a handful of cherry tomatoes, some olives or whatever. Then, drain your lentils, make a pot of mustardy salad dressing and combine the whole lot together into a sort of warm salad, adding a bunch of chopped parsley, capers or whatever you fancy. Eat with crusty bread. It's very adaptable and utterly delicious.

We quite often use left over chicken as a filling for burritos or wraps. Just make a spicy tomato sauce to go with it, and any extras you want (guacamole, sour cream, grated cheese, fried strios of pepper etc.). DIY food always goes down well.

Wagamama ginger chicken udon is my go-to for leftover chicken. But in general I do something Asian with it as the sweet and sour, or the spicy flavours tend to cut through the greasy cold chicken taste that is especially prevalent in leg meat.
