About leftover shortbread v lighthearted

I made homemade shortbread biscuits and nobody ate them at the house party i went to for football. Well ventilated outside party to be clear. 15 people.
I'm loathe to waste them.
What would you do? Eat them on the hour with a brew until I throw up or they're gone?'l
OR as I'm thinking, crumble into ice cream with caramel sauce and re-freeze? Would that even work?
What else could they be used for? Think of the wasted butter! I'm heartbroken. Ish

Yum. They’ll last well in an airtight tin. They’d be eaten with a cuppa here and gone in a few days.

I have no idea if it will work but I immediately imagined cheesecake base, maybe just a rich vanilla topping with some lavender to compliment the shortbread involved.

You can crush them up and use as crumble topping. I’ve done that, it’s lush.

I think they’ll go super soggy if you freeze them in ice cream.

I'm loving your icecream idea, yum. Otherwise for quickness an eaten mess with a twist! Cream, crumbled shortbread instead of the meringue or with it depending on preference, strawberries and strawberry sauce or another flavour/combo such as banoffee shortbread...possibilities are endless op!

Crumble I could get behind. Would you whizz it up in food processor?
I stupidly shoved a couple of cupcakes in with them and they've already gone less than crisp...

Put the biscuits back in the oven for a couple of minutes to crisp up. Then smash them in a bag using a rolling pin. I wouldn’t blitz in processor - it’ll go too fine.
