Summer al fresco dinners

Ideas please? V bored of the same weekly meals on rotation. We’re in the garden for dinners for a couple of months now, any ideas? What do your summer family dinners consist of? Nothing too fancy

Not exciting but mine still like tacos and fajitas in the summer

A roast chicken which is warm with salad bits

Salmon or sea bass with baby potatoes and veg

Not overly exciting 😂

Nothing exciting here I'm afraid. Halloumi kebabs and salad, jacket potatoes, toasties, soup, pizza and salad, pasta salad, salad salad salad 😂

Spinakopita is a big summer hit here.

Home made quiche too.

I also do veggie Sheesh kebabs.

Omelettes.

I make sun-dried tomato salad, roasted veg cous cous, tabbouleh as salads. And home made wedges (I use an American seasoning that's amazing).

We still have the odd egg and chips, jacket potatoes and maybe a biryani type dinner.

This is a good recipe for tabbouleh if anyone fancies something different. I actually make it with quinoa rather than bulgar wheat so it's gluten free. I've got masses of parsley and mint growing in the garden, so that helps!

Slow cooker Mexican style chipotle chicken - serve with homemade slaw, yoghurt and warm pitta breads
Salmon with pesto and a tray of roasted peppers, onions and courgettes
Roasted asparagus and cherry tomatoes with feta in balsamic vinegar
Beetroot, goats cheese and toasted walnuts on rocket
Grilled halloumi on leaves in a mint yoghurt dressing
Homemade cheeseburgers with sweet potato fries
Nigella’s fish curry

An easy one:

Buy olives, falafels, hummus, nice bread, olive oil and balsamic, cous cous, salad, stuffed vine leaves and other picky bits and lay it all out.

We do it and the stuff is great for lunch the next day too

Frittata,

Tortillini with roasted veg/meat/cheese/salad (whatever I have to use up)

Marinated Grilled chicken breast with couscous salad (usually with halloumi and roasted veg/chickpeas/tomatoes/stuff in the fridge)

Home made tomato mumshroom sauce with pasta and veg (and cheese and leftover meat if I have any)

Tomato Fish stew with Crusty bread/potatoes

Veggie (although could easily be non-veggie) sausages wih mushrooms, brocoli and potato wedges

Stir Fry

Veggie Ragu with half edamame spaghetti and half courgetti

Home made Pizza (although I don't make proper dough as I'm too lazy I either use a tortilla or make it using self raising flour and yogurt - don't have to kneed it)

Honey soy Salmon

Chicken cacciatore (probably spelled wrong).

Tuna fish salad - you make a cold mixture of tuna, mayo, and finely diced spring onions, tomatoes, golden delicious apples, cucumber, peas and celery, and chill it. Then you cook some long grain rice, make a circle of hot rice on the plate and put a generous helping of the cold crunchy tuna mix in the middle. The hot and cold together is amazing.

Simply Ella broccoli avocado salad
Chicken wings, celery
French carrot salad with some kind of protein

One of our favourite summer recipes is one out of a 1970s book called Clever with Cream that my Mum used to make. It's a lighter version of coronation chicken. It is compulsory in my house to serve it with homemade bread, new potatoes, salad, hard boiled eggs and a rice salad that contains prawns, peas, corn and pineapple.
T'aint summer til we've had that
