I think I must be boring?

I find when talking to people if I start telling them something that takes more than two sentences, I get interrupted. People seem to like me and find me funny if I keep my interactions very short.
I think I must be boring.

No I think people are just rude and selfish... and is there a chance that people are picking up on how you feel and that you're uncomfortable... are you generally confident?

I think you're probably picking up on when you're being interrupted as it's hurtful (I know from experience). I doubt it's happening every time and I don't think it is because you're boring. I think people who interrupt like that are rude and typically want to be centre of attention. Sometimes people interrupt by accident (like thinking someone has stopped speaking but actually they have paused momentarily or something), I myself have been guilty of this and when I realise they haven't finished speaking I am apologetic and insistent they continue. If the person was boring I think I'd zone out rather than jump into the conversation! If it's happening quite often, is it happening with the same person or group? I think it'd say more about them rather than you!

Do you talk quite slowly? I find people interrupt less if I talk quicker. It may not be what you’re saying, but how you’re saying it?

Maybe it is just certain people who do it when I think about it?

Very likely. Some people are just really poor listeners. Quite a lot of people actually.
