AIBU to ask what goes in your bolognese?

I feel like every bolognese recipe is totally personal to the individual who makes it - so tell me what’s in yours!

Mine is a bastardised veggie version. The base is caramelised onions, celery and garlic. The ‘mince’ is puy lentils and finely chopped mushrooms. Then the sauce has the following:

Tinned tomatoes
Tomato purée
Ketchup
Red wine
Liquid smoke
Salt
Pepper
Dried basil
Dried oregano
Fresh basil

I’m aware this would make genuine Italian nonnas spin in their graves Grin

Tomato purée

In the slow cooker for at least 3 hours

I bet the bacon is good. I use the liquid smoke to get that kind of flavour.

Mined beef, tomato frito, onion, carrot, garlic, tomato paste, beef stock, Henderson’s relish, soy sauce, dried oregano, dried basil, topped with fresh basil. 👌🏼

Mine is similar to yours but include carrots, red lentils and quorn mince. Oh and sun dried tomato purée and a bit of stock.

Onions, carrots, celery, mince, tinned toms, salt, lemon juice, tsp sugar. Left to bubble for as long as I’ve got but minimum 1 hour.

Mine always starts with soffritto, then tiny bits of bacon, garlic and white wine, with a combination of beef and pork mince. Let the alcohol burn off and then add tomato puree and chopped tomatoes that I've whizzed in the blender (iprefer this to passata).

I also add thyme, oregano, smoked seasalt and a bit of balsamic vinegar. Once I turn it down to sinner I add a parmesan rind from the freeze and then a bit of cream or milk at the end. Sometimes I grate courgette into it (I know!!) but I don't go crazy with veg as I have not-very-fond memories of a barely-cooked Bolognese with huge chunks of mushroom and peppers that someone else once made for me. I was not a fan. Actually sometimes I add a tin of cooked green lentils too.

FWIW I used to think that Bolognese had to be simmered for hours and hours but Ina Garten's weeknight Bolognese recipe has taught me otherwise.

Forgot to mention chicken stock - I freeze it in ice cube bags and I usually add a few of those.

Diced onion and carrot, minced garlic, fried off u til soft...minced beef added, fry until brown. Add a good glass of red, simmer for a minute or two, add Passatta (usually get the one with garlic and herbs) add a glug of Worcester sauce, squirt of tomato purée and a crumbled oxo cube or two (depending on the quantity I'm cooking) I then cook in the oven on a low heat for a few hours. It always gets good reports!

Mine is Mince, Passata, Onions, Mixed herbs, Garlic, Tomato puree, Tomato ketchup, Salt and Pepper. Looks quite boring really but I promise it's lovely!

It’s a flavouring made from condensed wood smoke. It gives veggie food that smoky, grilled flavour you get from cooked meat.

Onion, garlic, carrots and mushrooms chopped in food mixer. Minced beef, tomato purée, bay leaves and oregano. Canned tomatoes added once the beef is browned. Occasionally red wine.
