To ask for your best vegan meals

I’m trying to go vegan and am doing alright so far! Have only ‘cheated’ once last week when we went to a country pub with my parents and there was no vegan option on the menu.

Anyways...I just made a smashing vegan meal (I’m a v.average cook) and wanted to share and see if others had good recipes 😊

Chickpea Rogan Josh
Fried 2 diced onions, 1 diced aubergine, 1 diced red pepper and 5 minced cloves of garlic in 2 tbsp coconut oil for ages until really well caramelised 😃
Added in and fried 1/4 jar of rogan Josh paste
Added 1/2 can chopped tomatoes and 100g of full fat coconut yoghurt and a bit of salt and fried some more!
Added a can of chickpeas, some chopped potatoes. 1 cup of water and cooked down for 40 minutes.
Sprinkled with fresh coriander and ate with parathas
Honestly it was delicious! DP said he’d happily not eat meat over this 😂

I like roasted vegetables like sweet potato, pumpkin and beetroot done in garlic, rosemary salt and pepper and then I add the chunks to a bowl of canned mixed beans like kidney beans and berlottis along with more oil and maybe a splash of balsamic and some spring onion on top plus some corriander. I make variations of that depending on what's in the cupboard.

For example you can use rice or other grains instead of beans. Or other veg like peppers and onions etc. Also like rocket in there.

Packet spaghetti is vegan, so I like it with fried mushrooms, courgettes, onion and a tin of tomatoes, with garlic, herbs and seasoning.

Still looking for an edible non-dairy cheese ...

(I am not a vegan but eat meat and dairy free as often as possible.)

Also noodle and stir fry mix with soy sauce, ginger, garlic and chilli dressing.

A lot of our meals come from the Bosh books and we love them. The crispy chilli tofu and the Sichuan tofu are faves.

Falafel in pitta bread with chili sauce and salad. I make a cheats falafel, using tinned chickpeas. Traditionally it's made using soaked dried chickpeas.

Tostadas with salsa, black beans and guacamole

Check out 'The Happy Pear'. I love their Brazilian Feijoada (with 'meatballs' rather than sausage) and their 5 minute Chickpea curry!
