The 'everything' omelette

Moving house at the end of the week, have been trying to eat through food in freezer and fridge to save having to move it. Tonight I 'discovered' the everything omelette. Literally cooked up all the leftover meat and veg in the fridge, covered it with egg and cheese and... YUM!

How have I only just discovered this.

Steak and chicken leftover from yesterday's BBQ, plus a couple of rashers of bacon.
Peppers, tomatoes, chopped broccoli, peas, sweetcorn, artichoke hearts
Topped with eggs, cheddar and mozzarella.

It was 10/10!!!

Ooohhhh I do this but bake it. So kind of like a weird quiche.

My best one is the Christmas leftover egg thing. All the stuff, all the bits of cheese, eggs, into oven. DELICIOUS.

You gonna get 8/10 just for the artichoke hearts, so you couldn’t lose, really!

We have a “forage” night once a week (at least 🤣) and it always ends up being everything into a dish, beaten eggs and cheese on top - into the oven and bake 👍🏻

We do this with pasta too: we call it fridge pasta. Odds and ends of veg, leftover roast meat, bit of chorizo, a rasher or two of bacon, end of a block of cheese, dregs of a carton of cream... Add in a jar of sauce if need be. It uses up all the bits that aren't quite enough to use on their own and it's never not good.

Fridge omlet/ soup / pie, fried fridge etc got our family through many a meal.

Sounds great OP (but I am afraid I am going to mark you down slightly for the inclusion of sweetcorn).

I am another who does similar with all the leftover meat, veggies, cheese and added pasta.

Ya absolutely nbu. I'm another one who does this with pasta, having it now. Pasta with muchrooms, peppers, onion, and yes SWEETCORN, all fried. Mustard mixed in and an optional sprinkle of cheese.
