But I have another question. If you eat off-meat you have a fair chance of getting food poisoning.

But how is it that if I get something stuck in my teeth for hours and then swallow it, I don't get ill? Is it because it has been treated by the enzymes/bacteria in my mouth?

You're talking on the one hand about a whole portion of meat which either has been poorly cooked or since being cooked has had time to grow a dangerous quantity of something nasty. On the other hand, you have a tiny piece of properly cooked meat which has been in your mouth for a few hours - not enough nasties on that to trouble your digestion.
