Slightly boring

Slightly boring topic but need spring weeknight dinner ideas, lots of veg etc for toddler 🤷🏻‍♀️
So very bored of doing the same 4/5 meals..anyone else

BBC good food bean quesadilla - sounds more boring than it is, little ones really like it too.

Sweetcorn or broccoli fritters with a dippy egg

Bubble and squeak with a fried egg on top

Leek, bacon and pea pasta

Roasted veg and halloumi wraps

Smoked haddock, crushed potato and peas

Homemade pizza made with cauliflower pizza base and hidden Veg Tomato sauce.

Curry with homemade hidden veg curry sauce and mini poppadoms.

A good pudding or light tea for us is: Pancake stacks with chopped fruit to make faces with. I also make the pancakes different sizes so they can be assembled to look like Monkeys, Bears etc

Toad in the hole.

I make all these vegan but they can also be made with meat/diary or vegetarian.

Cooked cauliflower breaks down into rice easily and I mix it with a packet of pilau microwave rice & finely sliced spring onion to add flavour and kids like it. Served with chicken/paneer, peas and sweetcorn curry (passata, spoonful of sugar & curry powder to taste or jar of korma/tikka).

I've just started to make homemade meatballs to avoid the high fat and preservative versions. They go well with chopped veg and tomato sauce/passata.

Basically buy steak mince (so low fat), use egg to bind and squeeze to combine into a smooth mix, shape and fry to brown outside for about 10 minutes, finish in oven. Can be made as a batch and frozen.
