Chick pea recipes for fussy children

My children are a fussy trio and I have lots of store cupboard items that need making into nutritious meals. I have chick peas, tinned tomatoes, garlic, herbs, rice, pasta, wraps and all sorts of other things. They don't like anything very spicy, don't like peppers or courgettes.

Things they do like:

Bread
Bread
More bread
Carrots
Potatoes
Broccoli
Cauliflower
Crackers
Rice
Wraps
Pasta
Cheese (sort of)
Pastry
Sweetcorn

I'm getting really stuck on what to make them these days.

Abs yes I know there's a recipe topic but I need traffic so posting here.

Drain them then roast with herbs? Then chucked in a salad pitta.

Make hummus with them? Chickpea and mixed beans chilli (don't need to be spicy) put them in wraps with rice like a burrito

Rice balls? There’s a few different names for them depending on what nationalities cuisine you’re looking at.

A very mild curry with chickpeas and cauliflower and coconut milk. Fresh coriander and turmeric to give it a nice colour. Chickpea burgers or fritters.

Blend it mash chickpeas and use as a base to make patties/burgers. Mashed sweet potatoes are also a good base. Add grated carrots, sweetcorn or some minced peppers (they wouldn't know it was there). I spice mine up but you could add some ketchup for flavour.

Do you have onion?

Make pasta sauce!

Half an onion sliced, garlic (however much you want) in a pan with oil. Cook until translucent don’t let garlic burn or go brown.

Chuck in tinned tomatoes.

Simmer for 25 mins. Put in basil if they will have it. Whizz it up. Salt and pepper to taste

Pour in cooked pasta

My kids originally hated this however they now love it because I let them make it. Trick to fussy eaters for me was to get them involved in the cooking.

They get to put the ingredients in the pan and mash up the garlic. Then once it’s whizzed I let them throw the pasta in and they also stir it.

It’s annoying because they make a mess but then they eat it so I’m less stressed

I make this regularly and kids seem to love it:

Fry two onions, garlic and ginger in olive oil
Add (lots of) cumin, ground coriander, salt and pepper
Stir through tsp of tomato paste and harissa
Blitz 2 cans of chopped tomatoes and add to pan
Add 2 tins chickpeas, spinach, squeeze of honey, chopped parsley, juice and zest of half a lemon
Simmer for half an hour or so on medium/high with lid on

You can add lamb too - coat with cumin and coriander, seal in pan and set aside beforehand, then put back in the pan when adding the chickpeas, etc. I usually only add 1 tin of chickpeas when using lamb.

I serve with rice/cous cous and salad Smile

Jack Monroe has a recipe for a lovely peach and chickpea curry- just omit the chilli.

Falafel with houmous and wraps would be my suggestion Smile

Smoky chickpea stew? You can leave out the curry powder but need to keep the paprika for the smoky taste.

Don’t worry about Nigella seeds they are for the potatoes and the Zanizibar powder is kimd of like a curry so mild curry powder might work.

Chocolate hummus looks amazing!

Other than that they'd pull their faces at all the suggestions 😩 They are a pain in the butt. I'll see if I can tweak any of the suggestions though, thank you.
