Some low carb lunch and dinner ideas please?

Recently diagnosed with type 2 diabetes and going to go low carb as recommended. I tend to end up just eating egg or chicken or tuna salad for lunch and then some sort of chicken in a sauce and veg. I end up getting bored pretty fast.

Has anyone got any low carb lunch and dinner ideas? Fairly easy as I'm not the best cook.

Raw spinach and cooked flavoured chicken from a packet

chicken BLT salad (poached/grilled chicken breast, lettuce, tomatoes, spring onions and a few rashers of bacon - chop everything up and mix with a bit of mayo and season with pepper)

salmon pan fried with a little olive oil, squeeze of lemon and salt and pepper, lots of veggies on the side

omelettes (eg 3 eggs, sliced ham, mushrooms and peppers - but add whatever you like)

Stuffed peppers.

You can literally stuff them with anything you fancy.

I usually stuff them with completely cooked mince (well seasoned) mixed with passata.
I top them with cheese once they are done but that's optional.

Dinner
Curry or chilli with cauliflower rice
Sausage casserole
Steak with salad or roasted veg
Cauliflower cheese with chorizo
Cassoulet
Stews
Roast dinners without potatoes or Yorkshire’s but with all the other veg

Omelette - mushroom, cheese and herbs, tomatoes and bacon, for example.

Hummus and raw vegetables.

I can eat a bowl of garlic mushrooms just on its own, but this might not work if you aren’t a mushroom fan

We were really stuck in rut food wise recently and ordered a months worth of Gusto boxes, they offer low carb as an option and provide recipe cards to help recreate when you stop the subscription.

Protein and salad can come in numerous guises, and be appetising if you have lots of interesting dressings up your sleeve.

Find 4 or 5 you like and it’s a game changer.

Monday’s Italian salad is very different to Tuesday’s Vietnamese salad, which is completely different again to Wednesday’s Moroccan salad, etc.

I LOVE mushrooms. And I love all of these suggestions! Thank you so much, can't wait to experiment! Never even thought of mince stuffed peppers, thank you!

Frittata, you can put any non-starchy veg in it.
Lentil and bacon soup (there is some carb in lentils so check you're allowed)
Ratatouille with cheese
Eggs florentine
All kinds of meat stews: daube, goulash, etc so long as you don't thicken with flour or potatoes.
Salads! They don't have to be dull. I put carrots, celery, peppers, artichokes (tinned are fine), olives, radishes, cucumber, good tomatoes, cooked veg, green beans, capers, eggs, tuna, cheese, ham, cold beef or chicken in. You can make mayo with eggs, lemon juice and olive oil and guess what? it's virtually carb-free.

Stir fries are great if you like spicy food, quick and easy and filling too. My favourite is:

Splash of oil in the pan, add mustard and cumin seeds.
Teaspoon each of garlic and ginger paste and a sprinkle of chilli seeds. Let it all sizzle!
Add your favourite sliced veg (I use onions & peppers) and whatever protein you want eg chicken or salmon.
Pinch of salt and pepper and stir until it's all cooked.
Finally, a dash of lemon juice and some chopped coriander and serve!

It's very filling (I sound like a bore!) but it's delicious and all the fibre will erm, help clear the pipes Blush

strong cheddar on cucumber
bacon, eggs and mushrooms
tuna mayo snd salad
ham and luxury coleslaw (check carbs)

Home made curries or chilli with cauliflower rice (I use the single frozen bags you get in packs of four). I usually make enough to have for lunches too.

Omelettes
Tuna and egg salad
Stuffed mushrooms

The two Fast 800 books will give you lots of ideas - recipes are straightforward and it’s all tasty stuff.

These are regular meals now:

Thai prawn and tomato curry
Fish, fennel and tomato stew
Portobello mushroom pizzas
Lamb, mint and courgette burgers
Chicken and chorizo stew

Oh and pizza chicken too!

Butterfly then flatten a chicken breast. Top with tomato purée, cheese and veggies!

I've just made a gorgeous Quiche. Very low carb and good cold for lunches.

If you use a cup or two of ground almonds with olive oil mixed in to help it hold its shape when patted into a quiche tin. Bake at 180 for 10 mins.

Then layer fried onions, chunky ham or bacon and lots of cheese. Then seasoned beaten egg x8 and cream poured over. Low oven 150oc until the centre is set. A large deep quiche can take 45-55 mins but a loaf tin version is about 25-30.

It also works well with salmon.
