Urgent cooking question!

Hello, useless cook here, currently making this for my baby:

However I don’t have any kale! Would baby spinach work as a substitute and how would I cook it - just add it into the pot for two minutes at the end?

Yes I think so. Would chop it up though as it can go quite long and stringy which a baby might not like to eat (and might gag on). Just bung it in at the end. It’s more watery than kale though.

Yes sounds good. Spinach doesn't need a lot of cooking tho 2/3 mins max.

Spinach needs less cooking, so a minute or 2 less than the kale, but assuming young baby definitely tear leaves a bit lengthways because you will see evidence she actually ate them...
