To ask you for mozzarella help?

DH had a cheese making kit for Christmas. He has made a large amount of mozzarella and now realises it has to be eaten by Tuesday! He would like to use some for lunch at work - he has access to a toaster and a microwave - I've looked at bbc recipes but they mostly require an oven. Does anyone have any suggestions please? He has no allergies and will eat anything. We have most store cupboard items plus fridge is well stocked - just need some inspiration! (I don't eat cheese, so can't help😣)

Oooo I love mozzarella, these are 2 of my fave lunches
Wraps with sundried tomatoes and basil if you have some. Can be put in a toaster bag to melt the cheese, but doesn't need to be heated.
Pasta and pesto with moz chunks, microwave to heat up but again, doesn't need reheating.

You can freeze mozzarella.

Paninis. Pasta bakes (without the oven). Mozzarella goes well in salad or as a caprese (tomato, mozz, basil, Olive oil)

Mozzarella, tomato, basil and extra virgin olive oil is a lovely lunchtime salad option

Alternatively add to a tomato-based pasta for dinner and reheat leftovers in the microwave for gooey goodness.

Just freeze it until you need it.
Otherwise, baked pasta or aubergine parmigiana. Italians also put mozzarella in with the bechamel in lasagne layers.

It might freeze if you made it with full fat milk. Try freezing a blob tonight and defrosting it tomorrow. I think the worst that will happen is that it goes crumbly, but that would save you grating it over pizza later on!

Ideas are sounding good, especially the caprese (not heard of that before).

Toastie bags are an excellent idea, I'm sure we used to have some so will have a root around!

Can all cheese be frozen? The kit makes 20 different types of cheese, so I think this may be an ongoing issue!! 😂

I often have a caprese-style pasta salad for lunch: fusilli pasta, mozzarella pieces, pesto, halved cherry tomatoes, basil leaves and maybe some sliced black olives... I think it’s nicer if left out of the fridge for a couple of hours before I eat it, but that might be risky!

A cheese making kit sounds fabulous!
I was given a gin making kit but need to buy 10 bottles of vodka in order to use it. I could buy a couple of bottles of decent gin for the same money. Confused

I used to make toast, then top with a spoonful of chopped tomatoes (microwaved and seasoned with a bit of flat and pepper)and a handful of fresh spinach. Then grate mozzarella over the top.

So good and could have a few days in a row with one bag of spinach and a tin of tomatoes.

I have Caprese salad about once a week and used to make it in the office pre COVID.
It is utterly divine.
I regularly travel to Campania in Italy (where it originates from) and have it every lunch time there.

(Doesn’t have to be Pre-griddled but it tastes nicer)
My tip is to slow cook the whole thing in oven on low temp over the course of the day 🤤

Mozzarella can be microwaved. When I'm feeling lazy and don't want to make a mess doing cheese on toast under the grill cos I'm greedy and use too much cheese I just nuke some and pour it over the toast Grin

Tip: if you have tomato puree and garlic puree you can spread it on the toast and make a makeshift pizza Grin

Thank you so much! These are all great ideas and he's taken a caprese salad with pasta today for lunch!
The cheese making kit was an inspired gift - he loves learning/doing new things and often gets 'experience' type gifts but obviously can't at the moment. He started pickling over Christmas too, so we've got jars of pickled veg to eat now too!

Is it the kit that looks a bit like a series of books on the outside? I gave a few of them as presents this year so glad to hear that someone has made something successfully from one.

Sorry can't help with ideas for mozzarella as it never hangs around long enough to be eaten in my house.
