I have a food safety question!

Before we got put into tier 4 we were expecting to be hosting guests so bought an absolutely monstrous gammon.

When tier 4 was announced our fridge and freezer were packed completely full, we cut the monster gammon into 4 portions (we would never have been able to eat the whole thing!), cooked one portion for christmas dinner and wrapped the 3 remaining raw gammon joints in tin foil and kept in the fridge.

Yesterday we had eaten enough out of the freezer to fit the 3 foil wrapped gammons in so all 3 gammons are now in the freezer.

But I’m getting a bit paranoid.

The raw gammon has been in the fridge wrapped in tin foil which is not completely air tight for 3 days then frozen.
Is that okay?

Will it be okay to defrost in future for roast dinners..?
I don’t want to poison anyone!

So long as you froze on or before the use by date for the gammon, all is good.

Yeah I boil it first then finish in the oven.

I would imagine so, did you check the use by date on the gammon before you wrapped it up? As long as its within that date before you froze it you are fine. Gammon usually has a pretty long use by date anyway

I can’t remember the exact date but I do remember it being January so it’s definitely in date yes

Gammonis one thing you use your eyes and nose with. It goes quite green if it's off and can get slimy.

Did you smell it before you froze it? If not, definately sniff it when you get it out and start defrosting it!

You could also use it cubed in pea/ham soup.

Will be fine however i wouldn't have wrapped in foil to store as the juice still leak and contaminate the rest of your fridge always store cling film or reusable tubs so they are sealed

Be fine as long as frozen by use by date.

Or within a couple days of use by date if you’re me Grin
