How long does stuff take to defrost?

First time “doing” Christmas (obviously this is the case for everyone in Tier 4) but as in this is my first go at cooking turkey and trimmings. Decided to do everything in advance (I’ve got several chronic illnesses so need to pace myself with stuff) so made stuffing, cranberry sauce etc and it’s all in the freezer ready to go but I failed to think about how long does everything take to defrost??

So I’ve got in the freezer (and would like some guidance on how long to leave out on counter to defrost):

  • 2 lots of stuffing (one sausage meat, apple and cranberry and the other date and pate) both need defrosting before putting in turkey I guess?
  • Cranberry sauce
  • Spiced red cabbage- guessing need to just defrost this and heat it up?
  • Chipolatas, streaky bacon and pigs in blankets - obv not homemade 😂
  • Parboiled spuds covered in goose fat - do these need defrosting before putting in oven to roast or do you just put them in roasting tray as they are??!

Re the turkey and fresh veg we’re collecting that tonight and that’ll just sit in the fridge ready for Friday.

I’ve only just realised after writing this that it doesn’t belong on the AIBU board but if someone could answer my defrosting queries anyway I’d be very grateful! Thanks!

Don’t defrost meat on the counter.
I used to work customer service for a well know store. The amount of turkeys we’d get complaints about ‘ruining Christmas’ because they’d left it out to defrost 🙄
Anyhow, if you bought it frozen it should say on the back of the pack. I’d personally put it in the fridge the night before and leave it to defrost overnight but depends how big the pack/block is tbh.

Sausages should never be defrosted at room temperature as this is when bacteria can multiply rapidly
